Rosemary Square Announces New Culinary Concept and Chefs Joining the Neighborhood’s Growing Experiential Dining Collection

WEST PALM BEACH, FL - Rosemary Square today announced additions and new details regarding the neighborhood’s expanding collection of unique dining concepts and notable culinary talent. Planta, an innovative plant-based restaurant that promotes environmental sustainability, will open its next U.S. location at Rosemary Square. Also announced was the appointment of Chef Guillermo P. Eleicegui as Executive Chef of Hilton West Palm Beach and Chef Gregory Schiff as Resident Chef of Sur La Table, the leading retail destination for those passionate about cooking and entertaining. The additions further Related Companies’ mission to establish the Rosemary Square neighborhood as the new culinary heart of West Palm Beach.

Planta, led by internationally celebrated Chef David Lee and acclaimed restaurateur Steven Salm, will open at Rosemary Square in 2020, following the restaurant’s success in Toronto and Miami. Known for its chic and sophisticated interiors, the eatery will offer an elevated dining experience with an innovative 100- percent plant-based menu that promotes environmental sustainability.

Hilton West Palm Beach’s newly appointed Executive Chef Guillermo P. Eleicegui joins the culinary portfolio with a wide breadth of knowledge in the fine dining industry and experiences in various countries worldwide. Chef Guillermo has embraced unique opportunities in the industry from gaining experience at the Alvear Palace Hotel in Argentina to perfecting his craft at Buenos Aires’ Faena Hotel. He acquired skills at La Bourgogne under Executive Chef Olivier Falchi, whom he identifies as his greatest mentor. Most recently, Chef Guillermo served as Chef at SUGARCANE raw bar grill and the Delano Hotel, both iconic establishments among the Miami culinary scene. At Hilton West Palm Beach, he will oversee all food and beverage outlets including the hotel’s celebrated Galley, which features bold flavors, a lively mixology bar, pizza oven, and wood-fired master grill paired with a curated contemporary art collection.


“Growing up in a town sustained by agricultural production, my passion for cooking is surrounded by these memories of fresh vegetables, homemade cheeses and large family dinners,” said Chef Guillermo Eleicegui. “I am going back to my roots and bringing along new techniques to take everything to the next level....the best is yet to come.”


With an anticipated late November opening, Sur La Table, the leading retail destination known for operating the largest non-professional cooking school in the U.S., has appointed Chef Gregory Schiff to lead its signature cooking school at Rosemary Square. Chef Schiff, who has been with Sur La Table for two years, has a distinguished culinary background, having served as Executive Chef for top restaurants in Palm Beach including Sub-Culture Restaurant group and Farmers Table, and has extensive knowledge of Caribbean, French, Italian, and vegan cooking styles. Under Chef Schiff’s guidance, guests of Sur La Table will take home new skills and inspiration to share delicious meals with loved ones starting in December. 


“Cooking is an expression of one’s self that should be shared with others,” said Chef Gregory Schiff, “It defines my true joy of cooking and love of food.”


In January 2020, acclaimed Chefs Jeremy and Cindy Bearman will open High Dive, a relaxed yet elevated seafood-focused restaurant located on the second level at Rosemary Square. The husband and wife team will helm the restaurant and bar, with the support of their growing team, now including Chef de Cuisine Luke Bergman and Jessie Bell, who will oversee the beverage program. High Dive will feature globally-inspired plates that will be approachable yet refined, utilizing the highest quality seasonal produce, ingredients, and fish. Inspired by Chef Bearman’s travels and experience working in some of the country’s best kitchens, the 180-seat restaurant complete with private dining room and 80 outdoor patio seats will be a warm and welcoming space that reflects his passion for inventive food and ingredient transparency.


These additions complement the lineup of notable chefs, brands, and restaurateurs coming to Rosemary Square, including:

  • Miracle on Rosemary, a Christmas-themed pop-up bar, opening November 25
  • True Food Kitchen, a 6,000-square-foot, award-winning eatery specializing in health-minded and seasonally inspired fare by Dr. Andrew Weil
  • Pura Vida, a Miami-based, health-conscious café offering organic açaí bowls, superfood-packed smoothies, freshly squeezed juices, salads, and wraps made with fresh and simple locally sourced ingredients
  • Barrio Sangria Bar, a lively sangria and tapas concept by Big Time Restaurant Group


The new offerings build on the success of current Rosemary Square dining concepts including RH Café; The Regional Kitchen and Public House led by James Beard-nominated chef Lindsay Autry; and City Cellar Wine Bar & Grill by Big Time Restaurant Group led by Executive Chef Rolando Anoceto.
