Avocado Toast with Copper Blues
Copper Blues Rock Pub & Kitchen, a neighborhood go-to for craft beer and good music, hosts a rockin' Sunday brunch from 11AM to 3PM. The restaurant shared their delicious avocado toast recipe with us to make at home.
Ingredients:
1 avocado lightly mashed
2 slices multigrain bread
1 egg, hardboiled & diced
6 oz shredded brussels sprouts
6 oz garbanzo beans
1 oz feta cheese
1 oz extra virgin olive oil
1 tsp paprika
1 tsp salt/pepper
Preparation:
Step one: Toast bread until golden brown
Step two: Lightly mix extra virgin olive oil, salt/pepper and avocado in a mixing bowl
Step three: Lightly fry garbanzo beans in vegetable oil for an extra crunch
Step four: Do a quick sauté on the brussels sprouts with light extra virgin oil
Step five: Build avocado toast in the following order: Bread, avocado toast, garbanzo beans, diced eggs, brussels sprouts, feta cheese, paprika sprinkle.
Step six: Drizzle of extra virgin of olive oil (optional) and enjoy.
