Planta Banana Bread at Home
A fully vegan banana bread – what could be better? Planta, the innovative plant-based restaurant opening in The Square later this year, shared this easy 10-step recipe for those wanting whip up their own bread at home.
Ingredients:
2 cups all-purpose flour
1 tsp. baking soda
1/4 cup almond flour
1 tsp. baking powder
1 tsp. salt
3/4 cup soft plant-based butter
5/8 cup light brown sugar
1/2 cup granulated sugar
1 tbsp. flax seed
2.5 tbsp. water
5/8 plant-based cream cheese (Planta suggests JOI)
2 tsp. vanilla extract
1/4 cup almond milk
2 bananas 2
/3 cup chocolate chunks
3/8 cup cubed banana
Preparation:
Step 1: Combine all flour, cinnamon, baking soda, baking powder, salt
Step 2: Cream together smooth banana, soft butter, sugar and vanilla
Step 3: Whisk together, almond milk, cream cheese, ground flaxseed and water
Step 4: Combine steps 2 and 3
Step 5: Fold together dry and wet mixture
Step 6: Fold in chocolate chunks and banana chunks
Step 7: Lightly line baking tin with coconut oil and then dust with powdered sugar
Step 8: Bake in a preheated oven at 400F for 12 minutes
Step 9: Reduce heat to 350F and bake for 32 minutes
